  • Founder, CEO, President

    Jost first learned about fine wines while a manager at Tony's Restaurant in Houston in the 1980's . In 2004, he started the Houston office of a company building wine cellars at which he won a national award from SubZero Wolf and two local one for wine rooms.

    He had the idea for Nos Caves Vin in 2008 and opened NCV Wroxton in 2009. NCV Custom Wine Rooms was formed in 2013.

DeMarco Emmons

  • Operations, Inventory, and whatever needs to be done.

    DeMarco started at NCV in 2014 as a part-time helper. Now he oversees both locations, manages all logistics jobs, and does most collection inventory jobs.

  • Construction Manager

    Steve has been managing our wine room construction since 2005 and was the general contractor on both NCV locations. He was a widely respected GC in Houston since the mid 80’s, specializing in old homes inside the Loop and focused on the Heights and River Oaks areas.

    Now he is semi-retired and only does wine rooms for NCV.

  • Wine Services Manager

    Steve has been managing our wine room coChance Robinson is a Certified Sommelier with experience leading award-winning wine programs and helping private clients source wines and build collections. His work combines knowledge of the world’s wine regions with established winery and supplier relationships and an understanding of each client’s tastes.

     

     

     

    Prior to joining NCV, Chance was the Wine & Spirits Manager at Noble 33’s Toca Madera Houston, He previously served as Beverage Director for Brenner’s Steakhouse locations from 2020 to 2024. He has helped maintain Wine Spectator’s Best of Award of Excellence and was a 2025 Wilson Daniels scholarship recipient in partnership with GuildSomm. He is currently pursuing Advanced Sommelier certification.

  • Wine Room Designer and Project Manager - Dallas

    Susan has been designing and managing the installation of custom wine features in the Dallas area for over 15 years.
